    Microbial contamination is the most common cause of foodborne illnesses. The Centers for Disease Control and Prevention (CDC) estimates that foodborne diseases cause approximately 76 million illnesses, 325,000 hospitalizations, and 5,000 deaths in the United States each year. We are aware of more than five times the number of foodborne pathogens now than we were in 1942. Add to this the numerable toxins, allergens, and carcinogens that food may contain, and it gives you pause as you sit down to dinner. If this were not enough, we would now have to be concerned with the deliberate microbial contamination of our food by bioterrorists.
